Countdown clocks are extremely useful if you have limited stock, products on special offer or fresh items that need to be used up. Staff can see the message rather than wait for information to be relayed from the kitchen and so they can inform customers of available products without causing a delay in the order. Also in the same instance staff can promote special or fresh produce that needs to be sold that day and try and upsell these to customers.
